Ol' Charlie's Raspberry Chipotle Mesquite Ham

  • 2 Cook's shank hams
  • 2 bottles of Allegro Raspberry Chipotle Marinade
  • 6 lbs Kinsford charcoal
  • 6-10 pieces of split mesquite wood soaked in water in a bucket
  • 1 smoker
  • 2 disposable heavy-duty foil roasting pans (turkey size)


  1. Unwrap the two hams and place in one of the roasters. Cover them with one of the bottles of marinade. Cover the pan with the other roaster. Set aside while getting the charcoal going (4 lbs. to begin with, reserving the other 2 lbs. for later).
  2. Put hot coals into smoker bring to 250-300 degrees. Set covered pan into smoker. Close the lid and let 'er cook for 3 hrs.
  3. Open smoker, remove top pan, and roll the hams over. Add second bottle of marinade. Replace top pan. Close smoker lid and add the mesquite wood to the coals. Add the extra charcoal to bring up heat. Smoke for additional 3 hrs. Take out and serve.
